- Blanch the vegetables: bring a pan of water to the boil; put the green beans in for about 3 - 4mins, lift out and put into a colander, rinse under cold water, drain and dry well with a clean tea towel. Do the same for the other greens using the same pan of water - the sugar snaps will take about 2 mins so will the mange tout; the broccoli will take about 3 mins..
- Whisk the dressing together. Alter the balance of flavours depending on your taste..
